This is a Double Strength microbial rennet that contains no animals products. Non-GMO and Gluten FREE. Double strength microbial rennet derived from Mucor miehei. This rennet is acceptable for the production of vegetarian cheeses….1-the rennet must be added to 20 ml of water first. Use fresh, cool water in a clean container. 2- Let the solution stand for 5 min. 3- Warm the milk gradually, on low heat to 90 Fahrenheit (THIS IS IMPORTANT) 4- Add the rennet solution to the warmed milk and stir for up to 1 min to ensure that it is well mixed. 5-Move away from heat and leave the milk to stand with no stirring or agitation until it has set. This should take approximately 45 min. (THIS IS IMPORTANT)
